Bakery Assistant – £10.50 – £11.00ph

JOB PURPOSE:

To assist in all areas of the bakery in the production of quality, artisan doughnuts and other finished goods from start to finish on a rotational basis. To ensure that all tasks are carried out to the required standards expected by the company and our customers. Training to be provided.

KEY RESPONSIBILITIES

Dough Production 

  • Weighing out of ingredients in line with recipe standards
  • Working on the dough table, shaping the dough and forming the doughnuts in the BDM
  • Careful checking of the doughnuts shape and correcting before placing on the baking trays in the right position for first prove.
  • Loading the full trolleys into the prover in order, as instructed by the team leader or baker

Frying and Sugaring

  • Leaning how to use the fryers safely and efficiently – safety training to be provided
  • Frying doughnuts to the required specification & then stacking on to bakery trays to cool
  • Coating doughnuts in sugar or other ingredients in line with recipe requirements

Filling, Decorating & Packing

  • Glazing doughnuts in fondant or other ingredients
  • Filling doughnuts to required specification
  • Understanding and following strict portion control instructions and completing regular checks on finished goods weights
  • Demonstrating an understanding of the daily plan.
  • Ensuring that all paperwork is accurately completed as you go so that the right amount of each product is finished with no overs or wastage
  • Checking quality at all stages of the operation so that customer expectations are exceeded
  • Understanding the packing sheet and picking the right products for the right order

General:

  • Follow all Health and Safety Regulations and training given.
  • Ensure that all equipment is used in a safe and responsible manner, taking care not to damage company property
  • Ensure all cleaning equipment is used effectively, kept tidy, and in the designated areas.
  • Clean all equipment after use to the required standard
  • Follow chemical safe use guidelines (COSHH)
  • Maintain the food hygiene standards and procedures
  • Operate within Good Manufacturing Practises, including ‘Clean As You Go’
  • Work effectively with the Team Leader to ensure that areas are running smoothly during the break time, staff lateness, sickness or absenteeism as required.
  • Control wastage and portion control of your designed position on the shift
  • Carry out any other duties as deemed reasonable by any member of the Management Team

Attendance and Time Keeping

  • Be changed on time and ready to work at the start of your shift and after breaks
  • Clock in and out clearly for pay and time keeping monitoring purposes and for fire safety

With Training, Other Duties may Include:

  • Production of fillings, jams etc according to recipe requirement
  • Production of pastry tarts and tray bakes in line with specifications

  • Able to communicate effectively with people at all levels of the business.
  • Ability to work under pressure and to deadlines.
    • Committed, disciplined and hard working.
  • High standard of personal hygiene.
